This week’s topic on ‘Eating to Alleviate Ailments’ by Barbara Cox, top nutritionist at Nutrichef , Poole, turns the spotlight on Candida.
Candida is a yeast-like fungus which normally lives in each and every one of us without causing any problems at all. However, certain conditions may cause the Candida to multiply, causing an infection known as candidiasis or thrush. The are a variety of symptoms including bloating, intestinal cramping, thrush and rectal itching.
The number one cause is eating a diet that contains too much sugar. Candida absolutely loves sugar, so the more you give it, the more it will grow inside you! The best thing you can do is to try to reduce the amount of sugar in your diet, but also to cut out Candida’s other favourite food and drink, namely yeast, mushrooms and cheeses. I also advise cutting down on fruit (as it is high in sugar) until symptoms have gone, although make sure you get plenty of vegetables to ensure you’re getting enough minerals, vitamins and fibre.
If you think you may have an overgrowth of Candida, I advise you to consult your doctor first to rule out anything more serious. If Candida is suspected, dietary change is the best course of action.
You may wish to try my recipe for Lamb Meatballs with Chickpea Mash as it doesn’t contain any ‘nasties’ that can trigger candida or thrush. Chickpeas, like all vegetables are high in soluble fibre which helps clean the gut by absorbing and eliminating toxins via the bowel.
Lamb Meatballs Chickpea Mash
250g Lean Lamb Mince 1 tbsp Olive Oil
1 Onion (finely chopped) 1-2 Cloves Garlic
1 tbsp fresh coriander 400g Tinned Chickpeas
1 tbsp fresh parsley 50ml Dairy-free Milk
½ tsp ground coriander 2 tbsp chopped coriander
½ tsp paprika Pepper to taste
Pepper to taste
Put the lamb, onion, herbs and spices in a food processor and mix thoroughly. Shape mixture in to small meatballs. Grill for 10-15 mins turning occasionally.
For the chickpea Mash, heat the oil and gently fry the garlic for approximately 2 mins. Add the chickpeas and milk and heat thoroughly. Transfer this to the food processor and blend until smooth. Mix in the coriander and serve with the meatballs.
